When I’m craving something cosy in the morning, this high protein French toast is my favourite. It tastes like a weekend treat, but still fits a balanced day.

Healthy high protein French toast made with homemade sourdough bread, egg and protein powder, topped with Greek yoghurt and fresh fruit for a cosy but balanced breakfast.

Instructions

    In a shallow bowl, whisk together the eggs, milk, protein powder and cinnamon until smooth.

    Dip each slice of sourdough bread into the mixture and let it soak for a few seconds on each side.

    Heat the coconut oil or butter in a non-stick pan over medium heat.

    Cook the soaked bread slices for a few minutes on each side until golden brown.

    Serve the French toast warm with Greek yoghurt, fresh fruit and, if you like, a small drizzle of maple syrup.
