High Protein French Toast

When I’m craving something cosy in the morning, this high protein French toast is my favourite. It tastes like a weekend treat, but still fits a balanced day.

Healthy high protein French toast made with homemade sourdough bread, egg and protein powder, topped with Greek yoghurt and fresh fruit for a cosy but balanced breakfast.

Bereidingswijze

  1. 1

In a shallow bowl, whisk together the eggs, milk, protein powder and cinnamon until smooth.

  2. 2

Dip each slice of sourdough bread into the mixture and let it soak for a few seconds on each side.

  3. 3

Heat the coconut oil or butter in a non-stick pan over medium heat.

  4. 4

Cook the soaked bread slices for a few minutes on each side until golden brown.

  5. 5

Serve the French toast warm with Greek yoghurt, fresh fruit and, if you like, a small drizzle of maple syrup.

Start your day with a protein boost

French toast is often seen as an unhealthy treat, but this high-protein version proves otherwise. By using whole-wheat or spelt bread and a protein-rich batter with cinnamon, you create a meal that feeds your muscles and jumpstarts your metabolism. Cinnamon also helps regulate blood sugar levels, ensuring steady energy all morning.

Toppings & Tips

Top your French toast with fresh fruit, a dollop of Greek yogurt, and some pumpkin seeds for extra crunch. Instead of sugar, use a tiny bit of pure stevia or just the natural sweetness of a mashed banana in the batter.
