Low-Carb Zucchini Lasagna with Lean Beef

This is one of my favorite high-protein dinners. By replacing traditional lasagna noodles with zucchini slices, it becomes a much lighter dish while still delivering that comforting and satisfying meal everyone loves. Perfect for a nourishing and filling dinner!

Preheat oven to 200°C (392°F).

Heat olive oil in a pan and sauté onion and garlic until soft.

Add ground beef and cook until browned.

Stir in canned tomatoes and season with Italian herbs, cayenne, and habanero spice.

Let simmer for 10 minutes.

In a baking dish, layer zucchini slices and meat sauce. Repeat layers.

Bake for 25–30 minutes until golden and bubbling.

By replacing traditional lasagna sheets with thin slices of zucchini, you transform this dish into a low-carb, high-fiber dinner. This helps you avoid the rapid sugars in wheat, preventing energy dips or a bloated stomach after eating. The homemade tomato sauce is full of lycopene and free from the added sugars found in supermarket jars.
Variations & Storage
Use ricotta instead of béchamel sauce for a lighter, higher-protein result. This lasagna often tastes even better the next day once the flavors have melded. Be sure to briefly grill the zucchini slices or salt them beforehand to remove excess moisture.
