This Mushroom ‘Shoarma’ Bowl is a delicious and nutritious vegetarian meal that I enjoy making when I crave a tasty, plant-based dish.

A flavorful and colorful vegetarian bowl featuring crispy roasted oyster mushrooms seasoned like shoarma, served on a bed of fluffy quinoa. The fresh, marinated tomato and onion add brightness, the creamy avocado and feta provide softness, while a yogurt-herb dressing perfectly completes the dish

Instructions

    Preheat oven to 200°C (392°F).

    Shred oyster mushrooms and toss with olive oil and all spices. Spread on a baking tray and roast for 20–25 minutes until crispy and browned.

    Cook quinoa according to package instructions and let it cool slightly.

    Dice the tomato and mix in a bowl with cumin seeds, honey, olive oil, salt and pepper. Let marinate.

    Thinly slice red onion into rings and let marinate in apple cider vinegar.

    Slice avocado and crumble feta.

    Make the yogurt sauce: mix Greek yogurt with garlic powder, lemon juice, salt, pepper, and chopped chives.

    Assemble your bowl: base of quinoa, then top with roasted mushrooms, marinated tomato, pickled onion, avocado slices, crumbled feta, and a drizzle of yogurt sauce.
