Sugar-Free Banana Oat Cookies (4 ingredients)

These are the cookies I bake whenever bananas get too ripe. The browner the banana, the sweeter the cookie, so you do not need any sugar. They are in the oven in ten minutes and keep well in a tin, if they last that long.

Soft cookies made from ripe banana, oats, peanut butter and walnuts, with no added sugar. Ready in 25 minutes, ideal as a post-workout snack or with coffee.

Bereidingswijze

    Preheat the oven to 180 °C and line a baking tray with baking paper.

    Mash the bananas in a bowl with a fork until smooth. Stir in the peanut butter, cinnamon, salt and vanilla if using.

    Add the oats and walnuts and mix into a sticky dough. Leave for 5 minutes so the oats absorb moisture.

    Spoon 12 mounds onto the tray and press lightly into cookies about 1.5 cm thick.

    Bake for 13-15 minutes until the edges are golden. Cool for 5 minutes on the tray; they firm up as they cool. Store for up to 4 days in an airtight tin.

Sweet without added sugar

Ripe bananas contain enough natural sweetness to make sugar unnecessary, while providing potassium and fibre. Oats give slow carbohydrates and peanut butter and walnuts add healthy fats and a little protein, so your blood sugar does not spike the way it does with a regular cookie. Four basic ingredients, nothing from a packet.

Make it your own

Swap the walnuts for 30 g dark chocolate (at least 85%) or unsweetened desiccated coconut. Want more protein? Add a scoop of unsweetened protein powder and a splash of milk if the dough gets too dry. Almond butter works just as well as peanut butter.
