Turkish Meatballs with Roasted Aubergine and Yogurt Sauce

This recipe is one of my favorites because the spices make it taste really special, while the ingredients stay simple.

Spiced turkey meatballs served with roasted aubergine, cherry tomatoes, and a fresh yogurt sauce.

Bereidingswijze

    Preheat the oven to 200°C (392°F).

    Spread the aubergine and cherry tomatoes on a baking tray. Toss with 1 tbsp olive oil, salt, and pepper.

    Roast for 25–30 minutes until golden and soft.

    In a bowl, mix the turkey mince with egg, grated onion, cumin, paprika, chili flakes, salt, and pepper.

    Shape into small meatballs.

    Heat the remaining 0.5 tbsp olive oil in a pan over medium heat and cook the meatballs for 8–10 minutes until golden and cooked through.

    Mix the Greek yogurt with garlic, salt, and pepper.

    Serve the meatballs with the roasted vegetables, yogurt sauce, fresh herbs, and an optional squeeze of lemon.

High-protein dinner with an oriental twist

Lean meat combined with fiber-rich eggplant makes this a very satisfying meal. The fresh yogurt sauce provides probiotics for gut health and replaces heavy sauces. This dish fits perfectly into an unprocessed, flavor-focused diet.

Prep Tip

Roast the eggplant in the oven with a little olive oil until buttery soft. Serve with a fresh parsley and tomato salad for an authentic experience.
