Sticky Chicken Meatballs with Rice and Crunchy Broccoli

This is the kind of dinner I make when I want something filling, flavorful, and still very balanced.
Juicy chicken meatballs in a sticky soy-honey glaze, served with rice and broccoli.

Cook the brown rice according to the package instructions.

Steam or boil the broccoli until tender-crisp.

In a bowl, mix the chicken mince with the egg, oats, garlic powder, ginger powder, salt, and pepper.

Shape into small meatballs.

Heat olive oil in a pan over medium heat and cook the meatballs for 8–10 minutes, turning regularly, until golden and cooked through.

In the same pan, add soy sauce, honey, and water. Let it simmer for 2–3 minutes until slightly thickened.

Add the meatballs back into the pan and toss until coated in the sticky glaze.

Serve with rice and broccoli, then top with sesame seeds and spring onions.
