Hearty Chicken & Vegetable Stew — High Protein Dinner

This is one of my favorite dinners when I want something warm, nourishing and truly satisfying. The shredded chicken makes it soft and comforting, while still keeping it light and easy to digest.
A hearty chicken stew with tender shredded chicken, vegetables and potatoes in a simple homemade broth. A balanced, high-protein dinner that feels comforting without being heavy.

Heat olive oil in a pot over medium heat.

Add onion and garlic and sauté for 2–3 minutes until soft and fragrant.

Add potatoes, carrot and celery and cook for 5 minutes.

Place the whole chicken breast into the pot and add the water (and bay leaf if using).

Bring to a boil, then reduce heat and let simmer for 20 minutes until the chicken is cooked and the potatoes are soft.

Remove the chicken from the pot and shred it using two forks.

Return the shredded chicken to the stew and add zucchini.

Simmer for another 5 minutes until slightly thickened.

Season well with salt, pepper, lemon juice and dried herbs.

Finish with fresh parsley and serve warm.
