Stuffed Bell Peppers with Lentils and Cottage Cheese

I love this recipe because it is vegetarian, filling, and still gives you a really good amount of protein.

Oven-baked bell peppers filled with lentils, cottage cheese, tomato sauce, and herbs.

    Preheat the oven to 190°C (374°F).

    Cut the bell peppers in half and remove the seeds. Place them cut-side up on a baking tray.

    Heat olive oil in a pan over medium heat and sauté the onion and garlic for 2–3 minutes.

    Add the lentils, passata, Italian herbs, chili flakes, salt, and pepper. Let the mixture simmer for 5 minutes until slightly thickened.

    Remove from heat and stir in the cottage cheese.

    Fill the peppers with the lentil mixture and top with grated cheese.

    Bake for 30 minutes until the peppers are tender and the cheese is golden.

    Finish with fresh parsley before serving.
