The perfect balance between energy and recovery
This salad offers an ideal mix of complex carbohydrates from sweet potatoes and healthy fats from pecans. Goat cheese is often easier to digest than cow's milk cheese, making this meal perfect for a fit lifestyle. The high amount of Vitamin A supports your immune system, while the fiber ensures satiety without that dreaded afternoon slump.
Variations & Storage Tips
Add a handful of fresh spinach or arugula for extra iron and magnesium. For a higher protein version, add grilled chicken or chickpeas. You can easily meal prep the roasted sweet potatoes and store them in the fridge for up to 3 days.
