Goat Cheese & Roasted Sweet Potato Salad

This is one of those recipes that looks like you made a big effort, but it’s mostly the oven doing the work. Perfect for days when you want something delicious without spending much time in the kitchen.

A warm salad with roasted sweet potato, creamy goat cheese, crunchy walnuts and a simple balsamic-honey dressing, perfect as a nourishing lunch or light dinner.

    Preheat the oven to 200°C.

    Toss the sweet potato cubes with 1 tsp olive oil, salt and pepper and spread them on a baking tray.

    Roast for 20–25 minutes until soft and lightly golden.

    Meanwhile, whisk together the dressing: 1 tbsp olive oil, balsamic vinegar, honey, salt and pepper.

    Add the rocket or mixed salad leaves to a plate or shallow bowl.

    Top with the warm roasted sweet potato, goat cheese, walnuts, cherry tomatoes and red onion.

    Drizzle the dressing over the salad just before serving.
