High-Protein Lunch Bowl with Chicken, Quinoa and Cottage Cheese

This is my go-to lunch on days I train in the morning. You can prep everything on Sunday: the quinoa, chicken and dressing keep for three days in the fridge, so you assemble a bowl in two minutes at lunchtime.
A high-protein lunch with grilled chicken, quinoa, cottage cheese and fresh vegetables with a lemon-herb dressing. 43 grams of protein, fully unprocessed.

Rinse the quinoa under cold water and cook it in 100 ml of water with a pinch of salt for 12-15 minutes until tender. Leave covered for 5 minutes and fluff with a fork.

Rub the chicken breast with the paprika, salt and pepper. Grill or pan-fry in a hot pan with half a tablespoon of olive oil for 5-6 minutes per side until cooked through. Rest for 3 minutes and slice.

Combine the cucumber, cherry tomatoes, parsley and mint in a bowl with the remaining olive oil, lemon juice and a pinch of salt.

Spoon the quinoa into a bowl and arrange the chicken, vegetable salad and cottage cheese in sections next to it.

Grind fresh pepper over the top and squeeze a little more lemon over the chicken. Eat immediately or cover and keep for tomorrow.

Make it your own
Swap the chicken for 150 g of pan-fried tofu or a tin of chickpeas for a vegetarian version. No cottage cheese at home? Greek yoghurt or a boiled egg works just as well. In autumn, add roasted pumpkin cubes instead of cucumber.
